The olive tree has become a symbol of Tuscany: This characteristic oil plant is a key element of the region’s cultural landscape and vegetation. There are the olive trees around the vineyards of Villa di Vetrice, and they savour the respite of the evenings here, which are cool even in summer. In October, at harvest time, the fruits are not yet fully ripened, warmed patiently by the sun, without having been too exposed to it. Frantoio, Morellino and Pendolino are handpicked and pressed into oil on the same day. It is an oil with a deep green hue and an austere fruitiness.
